What is her weight? Rat fuzzies are kind of small, especially if you are on a 7 day feeding schedule. I would bump up to rat pups. If she doesn't grow much there is no need to shed. Since you are using a smaller food item once a week, she may be metabolizing most of it to maintain the weights she's at. If you go up a size, my guess is you'll see a change.
