Maybe the Canon Rebel T3 or the Nikon equivalent one. Not sure about the price, might be on the high end of your price range. I have the newer Canon Rebel T3i and it takes really good pictures. Of course, the lens that come with it won't do super macro pictures but you can still pretty good pictures. You could also start with that camera and save up for better lenses.. Or maybe rent some different lens and see which ones you like. That's what I'm doing at least
