I also would have a concern it is a lot of animals to trust to a single unit. Also with two racks there is going to be variations (a few degrees up and down in a single rack) and likely a few rack to rack so it is possible to see a fair variation top of one to the bottom of the other. Racks are a bit of compromise the temp usually is not exactly the same top to bottom. Balancing two might mean more than an optimal inside the variation.

With the VE I would strongly suggest a failsafe T-stat especially with a rack. Personally I would suggest a failsafe (second T-stat or internal circuits) it protects against probe pulling and failures.
