    Actually a lot of people do eat it as soup. You would dilute it with milk like tomato soup, and serve it with crusty bread. Another good idea I have heard is to dilute it with beer instead of milk and serve it that way. I hate the taste of beer so I haven't tried it that way. I cook a LOT with cheddar soup. You can stir it into any sort of casserole, rice dish, or mexican food. It is also great to add to homemade potato soup or broccoli soup.

    Heather, your dinner sounds divine. I agree go light with the side dish, and you MUST serve fresh bread with such an indulgent dish. Do you have a bread machine by chance? I have a killer dinner roll recipe for the bread machine.
