Siamese have a color to their coat, typically a light creamy color and darker points in general.
But a lot of poorly bred Siamese have lighter points, I tried to get all of my hold backs from black rats.
Himi's are white like a PEW.

Here were mine as youngin's. They were solid-colored.
Then they turned white with pioints

Oh. Ok.
I'm pretty sure that Dumbo Rex girl I asked about earlier is a Himalayan then. She's much more white than my siamese, which are cream. She looks almost like my PEW Dumbo Rex.

Himis are my favorite pointed rats. My first pregnant female was a himi. Mind you she produced 10 healthy agoutis but still.

Mother looks Agouti, I'm gonna go out on a limb here and say they are Fawn. Which is RED Agouti.

Himalayan rats have no agouti genes in them, unless you bred an agouti to them they can't make agouti.

Probably wrong, but that looks himalayan to me? I have 3 pink eyed himalayan.
The rat in your picture is a Siamese, Himalayans are white typically with no body color except the darker points.
They are white because Himi's are not a pure genetic, they are half albino half Siamese, similar to a super stripe ball python is a yellowbelly and a specter combo.
Both genes land on the same locus, allelic to each other.

Check the picture he posted. The rat in the photos with the babies is 100% Agouti. It's just not that great of a photo.

Beautiful rats!! They really are gorgeous creatures. I hope that when (if) I start breeding them, I can let some go for snake food
