OP, we differ bigtime on Vampire Hunter D. I did not enjoy that one at all. That said, anybody who likes Rurouni Kenshin must have some taste. As someone else said earlier, the Kenshin OAV/OVA/whtever those are called are really good. They're done in a different art style than the main series, and with a more serious, darker tone, and I think it works very well.

As others have mentioned, you really can't go wrong with Cowboy Bebop, though I wouldn't say it's "recommended for everyone," as it's really pretty bloody in places, and therefore not exactly kid-appropriate.

If you're just looking for something silly and fun, Ranma 1/2 is always good for a laugh.

Neon Genesis Evangelion is something you'll either love or hate. If you can't put up with an EXTREMELY whiny teenage main character, don't bother, but if you can, there's a pretty good story in there. Again, too bloody to be kid-appropriate, so if you've got children, don't watch it with them.

If you're up for something so sugary cute that it should be annoying, but somehow manages not to be, Ah My Goddess is pretty entertaining. That's about all I have to contribute to the thread at this time - it's been quite a while since I watched anime on a regular basis. If I think of more later, I'll let you know.
