Dont people do natural incubation all the time? If so, why would it hurt for me to use her incubating her eggs until I get the cooler set up?

Of course they can take care of the eggs themselves and it probably wont hurt them any to wait a couple days until you get an incubator. That is of course assuming that all of the conditions within your tank are right for eggs which they most likely are not. Its just better to plan ahead
