My new favorite recipe:
Beef Marsala
4 small boneless beef steaks
1 8oz. pkg mushrooms, sliced - I like baby bellas
1/3 cup flour
1 tsp. minced garlic
1 tsp. majoram
1 tsp. dried minced onion
1 tsp. dried basil
1 tsp. dried parsley
1 tsp. sea salt
1/2 tsp. black pepper
4 tblsp. butter
2 tblsp. olive oil
1/2 cup Marsala cooking wine
3/4 cup beef broth
Mix the flour, garlic, onion salt and pepper in a shallow dish. Reserve 1 tblsp flour mixture, coat beef with remaining flour.
Heat 2 tblsp of the butter with the olive oil in a large skillet over medium high heat, whisking to blend. Cook the steaks about 3 minutes per side until golden brown. Remove from skillet and set aside. Add remaining butter and mushrooms to skillet. Cook and stir about 5 minutes, or until tender. Add wine to skillet and bring to a boil, stirring frequently. Boil for 2 minutes. Add broth and reserved flour mixture, along with basil and parsley. Return steaks to skillet, and turn heat to medium-low. Simmer gently 2 or 3 minutes until sauce thickens. Spoon mushrooms and sauce over steaks and serve with potatoes or rice and rolls.
