That's perfectly normal. Usually they explore for the first day or so then settle in.
Daily handling (except for during sheds and before/after feedings) is fine so long as you ease into it. Start out with short handling sessions a few times a week. Hatchlings especially tend to be nervous, and you want to make this transition as smooth and stress-free as possible while still getting him used to handling.
Coconut fiber is great for frogs and tropical lizards, but is not a good substrate for snakes. Cypress mulch tends to hold humidity better, though in a glass aquarium it's going to take more than substrate to get the humidity up to par.
