With that many bad sheds in a row, it's probably time to start looking at your set up and husbandry. Please take a moment and look over the following to see if you might have missed something in your set up.

You can bathe her. But only after she sheds and has stuck skin. Like others have said, bathing before a shed strips the essential oils.
I wouldn't touch the eye caps. They will come off with the next shed if you bump up the humidity. Messing with the eye caps is risky and you can potentially do more harm than good.
If she still has stuck skin or eye caps after the next shed, you can place her in a warm damp pillow case for an hour. This allows her to move around and remove whatever skin is still stuck.

Even if she wont use a humid hide regularly, if you can't get your humidity up high enough during shed (70%), then it's a good idea to provide one so that your snake has access to the proper humidity to allow for a full shed.

I agree about yahoo! Yahoo who?!?! LOL. And I'd also like to add 70-75 percent during shed. You said 50-60 so I just wanted to remind you about during the shed.

Do you think it is still okay to put mineral oil on her eye caps still? Or would that make it more difficult?

At this point I wouldn't, If that was my animal I would wait until the next shed, then if the eye caps are still a problem I would consult a vet. Make sure to check the shed skin for the eye caps, I believe there can be eye problems that look similar to stuck shed.
- save the skin incase you decide to go to the vet.
