Hi, I took all four tubs out and all I can see is solid piece of 11" flex watt running from top to bottom - no connections are visible

I wouldn't worry about it, as long at the flexwatt is capable of getting he temps required it really isn't a problem.
The connections are probably under the bottom tub's shelf.

I even looked underneath the rack - nothing. They must be inclosed within the frame of the shelf
I do have my probe tape just off the flex watt because that was how I was told to do in the beginning but you guys are saying I should tape it directly on the flex watt is this correct

It should be on the flexwatt. That way it can measure the temperature of the flexwatt
