He is a proven breeder, possible het pied, but they have never attempted to breed the trait out to prove it. Would that change matters on his value?

No, this should not affect his value since it is not proven. He should be priced just as a proven breeder (although this really doesn't add much, maybe $50 more than a hatchling) Cinnamon male.
