It really doesn't matter what you hold back as long as the parents are healthy and the kittens you hold back are healthy.
Otherwise you should keep whatever your favorite colors are, lol. I keep rats that have unusual markings, as well as solid blues, blacks and tans.I also breed siamese, but they get fed off like all the others unless they are exceptional and worth breeding.
If you want to sell any on the side as pets, solid colors seem to be most popular. Usually tan rats are pretty desirable, though blues and siamese are popular as well. Nobody buys black hooded rats or albinos (pink eyed whites), and solid black rats aren't very popular either.
