Don't cut. The lower temps will have slowed down development, so you'll cut too soon...
EDIT: I mean, don't cut yet. I'm not sure how many extra days to wait at 76F, but definitely at least the 4 days until they were due.
If you see them visibly going bad, okay, then cut.
