Does that most likely mean that today is the day I can start countdown from? or will he continue to breed through pregnancy?

She was doing the whole arch back thing and such, and if they have only been together for a few days, week at most, so I'm just curious...

If you saw them breeding over and over today then most likely yes the countdown can proceed
Sometimes the females will allow the male to breed them even though they are pregnant, but not usually for long.
As she progresses into her 2nd week pregnancy she will start refusing him, rolling on her back and squealing and generally running from him every time he pursues her.
Eventually the males gives up or get their butts beat in their failed pursuit
