    I would bet that the eggs would be fine, but it's hard to plan for the unexpected. If you are worried about a spike in temp, you could consider buying an on/off thermostat, setting it a touch higher in temp, and plugging your incubator into that so that you have a back up system to turn off your heat if it spikes. Also, maybe your sister would be willing to come over once during the week to check on them?
