Trouble is normally the right way to secure the probe I think. I was thinking using the same idea, but maybe putting a second sheet persplex on top of that with little parts grinded out to fit the probe and thermometer underneath that (I hope it makes sense?)

Just attaching the probe / thermometer near the heatmat seems to be a pain
