About 39 days if my math is correct.

80.5/97=0.830
89/56=1.589
100/X=Y

Y=1.589-0.830=0.759/8.5=0.089
Y=o.089X11=0.982+1.589=2.571
Y=2.571

X=2.571x39=100

Therefore 39 days at 100*F.
