Young one's will shed every 4 to 6 weeks. It slows down as it gets older. I think a full grown adult goes about every 3 to 4 months. Of course, it varies as all balls grow different. If they are injured, or have had mite problems they shed more often.

Yup, they shed WAY more than once a year. Generally about once a month for babies and every couple of months for adults. As long as he's getting all of the skin off when he sheds, then everything's perfectly normal 
Oh, and it's best not to handle them while they're shedding so they don't get stressed.

Amount of weight gained (food in) = number of sheds.

Eh, not really. They shed for a lot of other reasons, including to rid themselves of pests, keep their skin from losing it's oil coating, heal injury, etc.
