I think the main draws of a mojave is its color and its super form. An albino mojave wouldn't look very different from an albino black pastel or an albino 'normal'. It would be different, but not very much so. Also because the super form is an all-white animal, you wouldn't be able to tell an albino from a regular super. I think people make albino black pastels because you can go to an albino super black pastel from there, which would be patternless pinkish yellow.
I guess nobody's found it interesting enough to invest the time and effort into it, when a breeder could easily make an albino spider or spinner instead. People tend to mix albino in with the pattern-changing morphs, like pied and clown. Regardless, it's never been done, and there's a first time for everything.
