Can I ask why it is out of the egg before the yolk was fully absorbed?

Keep an eye on that if it was twisted. Many problems can arise from the umbilical cord being twisted or tied. Usually why they leave early is something is stopping the yolk from being absorbed.

What day to you cut those on?

It's been 2 weeks and they are still in the egg with yolk.
