Hatchlings and juveniles do fine in 10 gallons, but you CAN just start them in a 20 gallon though you will have to provide lots of hides and some decor so that it is not so open. Hatchlings and juveniles are quite small and may feel vulnerable in open spaces. Tubs are also appropriate for housing corns, typically an adult can be housed in a 30 quart but if you don't have a rack system set up yet you might go for a 41 quart tub for a little more room. Hatchlings go in more of a shoebox sized container, yearlings in a 15 quart, juveniles can move up to a slightly larger size or you could go right to your adult size tubs, it's up to you.

Hides can be made out of anything, really. Empty containers, paper towel rolls, toilet paper tubes, cereal boxes, etc. They're disposable so if they get pooped on you can just toss them out and replace them with something else.

Reptile carpet is good if you have at least two pieces that you can switch out when one gets soiled, I'm using newspaper and paper towels now though. Shredded or just sheets work fine. Most people use aspen, I find it to be a pain when it comes to complete cleaning, but maybe that's just because it's difficult for me to wrangle a 20 gallon tank halfway into a garbage bag without spilling.

Some breeders do brumate, some don't, it's more a matter of personal preference.

Humidity should hang around 50%, bump it up to 60% when they're shedding. I usually just scoot the water bowl over slightly onto the UTH and that does the trick.
