I am using/learning iMovie at the moment. It seems to be doing the trick... I am not sure what the file type will be when I save it...
The main reason I wanted to convert them to AVI's is because Windows movie maker does not allow you to import .mov files. However, iMovie allows you to do such...and more I am learning.
Gotta love Macs...

I use Pazera_Free_MOV_to_AVI_Converter and it works great, and its free to boot

a free easy way is to download an application called handbrake, I use it to convert all kinds of movies, movie files etc. into avi.

Ah yes, I forgot about Handbrake. I've ripped DVDs using Handbrake but I noticed some lag between the video and audio by the end of the movie. For shorter videos it worked quite well though.

Good luck, I'm sure iMovie will allow you to keep the quality and do any editing that Windows Movie Maker would do and then some.
