The thermostat probe just controls the uth. If you go with a simpler unit then it won't even display temperature. The nicer models let you choose a temp as a set point but that is the temp of the heat element, not the temp the snake experiences.

You need to take three measurements in the enclosure. Cool side ambient temp, hot side temp and ambient humidity. The flukers covers the ambient but you will need a thermometer with a probe to measure the temp right on the glass under the substrate where the uth is. You want to measure the hottest spot the snake can get to. The accuriyte has all three of these in one unit for $12. The flukers only meaures ambient temp and ambient humidity and costs $20. You will then need a probe thermometer which costs $10-$15 from the petstore. The accurite is more bang for your buck.
