I love to cook in my crockpot. It's the most productive cooking (IMO) you could ever do...ya throw in your meat, spices, veggies, and a lil water, turn it on low, and go to bed. When you awake the next morning......Voila! a delicious meal you made yourself! I've made everything from creamy curried chicken, pot roast, chili, BBQ pulled pork, etc,. this way. I love curry, and make a really easy curried beef with onions over rice. Also, whenever I go to a party or potluck I make "taco dip". (it's a BIG hit with the guys)
Here's the recipe:
1lb ground beef
1/2 onion (finely chopped)
1 pkg cream cheese
1 jar fave salsa (medium or hot)
fresh guacamole (optional)
shredded cheddar
sour cream
Brown the onion in a pan with a little butter. Then add the ground beef and brown it. Keep the heat on med, and add the cream cheese. Stir till completely melted and mixed with the beef and onion. Remove from heat. Add the salsa and guacamole. Stir ingredients till thoroughly mixed. Top with cheddar and a little sour cream. Serve with tortilla chips to dip with!
*note: I would use a good sized pan, cause you'll need the room for all the ingredients.
