Right now I'm wanting to make a lot of different styles of beer, just so I have a good grasp of what different ingredients and methods add to the finished brew. The speed bump I'm at now is trying to come up with a Weiss recipe that isn't sweet and that doesn't have a lot of esters. A lot of people would probably tell me to just not use wheat if I don't like sweet, estery beer, but I like the idea of adding some of the characteristics of wheat to a traditional brown ale or porter. I think I know what I have to do, but I don't want to be wrong and up up with 5 gallons of Hacker Pshorr.
