Yes, keep the CGD in the fridge to keep it nice and fresh. If your crestie is pooping then you know it is eating, even if you don't see it eating. If it was not eating it would start losing weight fairly quickly. Not eating is one of the main concerns of new crested owners because smaller geckos don't eat that much so it can be hard to tell if there is any food missing from the dish.
As mentioned, hand feeding can help--I just dab a bit on my finger and touch it to the nose of any little ones that I feel the need to assist. When they start licking I hold up my finger with more food on it and let them lick it off. Sometimes it takes several tries for them to get it and not freak out when you touch their nose, but usually they figure it out pretty quickly.
