A rheostat is okay. A thermostat is better though.

A rheostat just a dimmer. It limits the power going to the heat mat to make it cooler. The problem with this is it doesn't realize when the room temperature fluctuates so the temps will swing based on how hot the room is.

A thermostat has a temperature sensor that you place on the heating element. The thermostat uses the information from the thermometer to either adjust the amount of power going to the heating element, or turning it off when it gets too high and on when it gets too low.

Basically, you will have to constantly adjust a rheostat and you will only have to set a thermostat once.
