He's probably nervous. Some balls never get over that, but 99% seem to calm down and stop striking at everything. Make sure you're careful and slow, and he'll probably stop.
The shaking could be a slight form of "wobbles" from his spider genes. It could also just be him concentrating on the prey item. Some babys(spider or not) will seem to be over-excited at a food item, and they will 'shake' while poised to strike.
