Taco Tuesday is a custom in many US cities of going out to eat tacos or in some cases select Mexican dishes typically served in a tortilla on Tuesday nights. Restaurants will often offer special prices, for example, "$1 fish tacos every Tuesday night". It is popular in many big cities across the nation and especially popular in the beach cities of Southern California. Taco Tuesday is similar to Happy Hour in that restaurants vary in their participation, hours, and specials offered.
Legally, "Taco Tuesday" is a trademark of Taco John’s and other restaurants are prohibited from using that term.

i still cannot get over this. i find it very interesting that Taco Day is not a fixed Tuesday.According to The Strange History Of Taco Tuesday, the restaurant promotion was started in 1982 by Taco John's, and trademarked (with subsequent bad press) in 1989. The trademark is apparently no longer enforced.
According to Taco USA, the term was trademarked by Potato Olés, but even here, it's recognized as being in widespread use already.
The same book also recognizes the claim of El Torito restauranteur Cano as one of his innovations, which would place the origin somewhere between 1959 and 1977.
