So I get tired of the recipes I have sometimes, and want to try something new and yummy. I will post two that I really like, then let's seee what you got! I could use some new ideas.
Blue Chicken
Preheat oven to 350
2tbls margarine
1 pkg boneless, skinless chicken breast
1 cup sour cream
4 oz. package of crumbled blue cheese
1 tsp salt
1/8 tsp pepper
1/4 tsp paprika
1/4 tsp onion powder
1/4 tsp garlic powder
Melt margarine in frying pan, then brown chicken in pan. Once browned, remove chicken to casserole dish. Put rest of ingredients into same frying pan. Heat and stir to loosen any browned bits and melt cheese. Once melted, pour over chicken, cover with foil and bake for 1 hour. This to die for, and you must have rolls to sop up the sauce!
Next up,
Sweet & Sour Meatballs
1 1/2# pork sausage
1 1/2# ground beef
3 slightly beaten eggs
1 cup fine bread crumbs
1 1/2 tsp sage
Mix well, and make into tiny balls. Brown well in frying pan.
For Sauce-
2 1/4 cup ketchup
5 tbls brown sugar
4 1/2 tbls vinegar
4 1/2 tbls soy sauce
*I usually double batch the sauce, as we like them saucier. I also only use 2 tbls vinegar per batch, as I am more of a sweet than sour person.
Combine all sauce ingredients and cook for 10 minutes. Then add meatballs and simmer for 30 minutes.
Enjoy!
