Been on this avacado kick and got to thinking.....so I decided to try a new twist in chicken salad.
You need:
1 barely ripe avacado
1 large boneless chicken breast cooked (I season it while cooking)
quarter of a lime
about 1/4 cup mayo(or to taste)
about 1/4 cup medium chunky salsa (or to taste)
salt and pepper
Cut the chicken into 1 inch pieces, and the avacado into 1/2 inch cubes.Put in a large bowl. Squeeze the lime over the pieces and toss. Add the salsa and the mayo, and mix the ingredients well.(you can add more, if you like more) Salt and pepper and mix to taste. It turned out really good!!! very tasty. If you like spicy, you could probably try hot salsa instead. Let me know how you like it if you try it!
