Sorry if this is a stupid question but I recently switched to the accurites with the probe but what I need to know is - there is an "in" temp and an "out" temp, which one is tied to the probe??? I am thinking it is the "in" side but not sure.

And what is the ideal temps I want to see for the "in" and the "out" readings.
