I thought tape/sticker surfaces were bad for snakes? I never knew why, I just assumed it was because chemicals/ripping out scales

It's just avoid using tape inside the enclosure or anywhere a snake can slither on. They get stuck on it and it can severely injure them. But nothing to do with chemicals, one little sticker for a photo won't hurt them.
I did try to take a pic of her with a sticker on, but she was being to wiggly. If you stick the sticker on cloth off and on enough to make it mostly un-sticky, then moisten the back with plain water if it's too un-sticky, it will cling just long enough for a pic or two. Not sticky enough for harm

Banana stickers are not going to be toxic... they're designed to stick on food. The stickiness can be lessened by peeling them on and off or just patting them with a finger so the skin oils destroy some of the glue. Then they stick on the snake lightly.
