Incubator Thermostat
I'm going to make an incubator out of an old wine cooler, like many other members have done. My question is how "fancy" of a thermostat do I need to buy? Does it need to be a proportional thermostat? What does everyone else use?

The thermostat is the single most important item you can invest in. I don't know what your collection looks like but imagine you are about to hatch out a clutch of leopard enchi clowns worth about $3500 to $5000 apiece. Do you really want to be that guy that saved $30 bucks buying a cheaper thermostat and then lost a clutch of eggs worth potentially $15,000 to $20,000 dollars. Lets take another direction. For the sake of 30 or 40 bucks, do you want to risk potentially losing/killing 6 to 10 baby ball pythons regardless of the morph/value.
Buy a good proportional thermostat and it will give you piece of mind and last you years. I like Herpstats but there are others that are still quality.

Could not hve said it better myself.
As for what I use personally, round here everything runs on Herpstat whether it's racks or incubators. They are a solid investment I have some still running that are 10 years old.

Invest in a backup thermostat too! Failures happen and what's another $100 to add another level of safety. I use VE-300 thermostats as my main thermostat and VE-100 thermostats as by backups.

I have run a ranco thermostat in a min fridge for a few years with no problems but had a few scares. Using herpstat this year

I am using a Herpstat 1 on mine here. You can get one of the Redline versions directly from Spyder Robotics on sale for $134.10 right now.

I start this year to use a dual module. Controls hatchling rack and thermostat. Both only get fired up for part of year
