Hissing isn't something to worry about, similar to a dog growling - it's a warning. It's a bad behavior, and I don't treat it as such. However, the idea SRMD94 had should be put into use if it comes to striking. In my collection, if a snake strikes at me or bites me while I'm handling, I don't react and continue to handle them until they calm down, and then put them back in the enclosure, because that way they might start to realize that biting gets them nowhere.

I do this on the occasion that I handle my little enchi girl. Shes new so I keep handling to a minimum for now but when I do she is relentless! No hissing but man she strikes over and over again. I feel like handling her for too long is too much stress but something I am sure will be worked out of her. I have not yet been tagged by her but there have been some close calls... But I completely agree you cant let it affect you. Bites come with the game anyway...
