my pastel is going into shed for the first time for me!! (had already shed before i purchased him.)
im excited to see if his shed will come off in one piece.
that is an indication that my husbandry is good. correct?

I think it depends. i have some snakes that aways shed in one piece, others in the same set up that dont

It's a good indication that your humidity is sufficient but it doesn't mean your husbandry is spot on because there is more than just humidity to consider.

My ball has spot on care but he hardly has good sheds. I mean, he gets the skin off by himself, but it's never in one piece. I asked about it here recently and a humidity hide was suggested, so I will be building one for him soon. If you have issues I would also suggest the same.

i originally had a humidity hide box with cypress mulch. but i found that he was pooping in there and since there was a high humidity in the box it began to smell bad due to the urine and poo poo.
my humidity is good and all i do is place a damp paper towel on the top of the cage.
(10 gal glass tank for a young bp, once i get more money ill be changing to a rack system.)
and one more question. while he is in shed is it ok to handle him? mainly to just clean his cage.

Don't get excited until you see the shed itself. All snakes will shed whether they're being kept well or not - how whole the shed is depends on quality of husbandry.
You can handle him while he's in the shed cycle. Some snakes may be more irritable during this time, though, and keeping it to a minimum is probably a good idea if this is the snakes' first shed with you.
