Pork Steak? How on earth do you cook it?

I have several pounds of pork steak in my freezer and I cooked some yesterday in the crock pot for 8 hours. I made a roast out of it because it was a package with two giant steaks and I really felt like roast. I made it the usual way I make a roast, drown it in chicken broth, add onions potatoes and carrots, and smother it in herbs=rosemary, thyme, oregano, basil, etc. It was FANTASTIC but it was incredibly greasy! Perhaps it was because it's not store bought meat, my aunt has a cattle farm and a few hogs. I've got 50 pounds of meat in my freezer now as a late birthday present!

Any who, how would you make pork steak? These are giant hunks too, we're talking a good 1 to 2 pounds per steak. I thought about cooking them on the grill like you would a normal steak. We had a hog farm growing up, but my step mother was a terrible cook so if she ever made pork steak it was blacken beyond recognition.

I would either: dredge in in flour and fry it on the stove top. When it's done cooking, pour all but a couple tablespoons of the grease out. Add a couple tablespoons of flour to the remaining grease. Brown the flour until it makes a paste, then add in a cup of milk (maybe more...) and make some gravy. (Can ya tell I'm a southern gal?)

Or: I would put it in a 9 x 13 glass baking dish along with your veggies, cover it with alum. foil and bake it @ 350 for 45 mins to an hour, depending on how thick they are. Probably slightly healthier than the fried method, but not much.

You could cut it into small strips and stir fry it.

    Hmm..that's all I got...

personally, I would put a jerk slurry on it and marinate it for at least 24 hours, then grill it. You could put just about any kind of marinade or season rub on it and it will turn out okay.

My main list of spices that I use very regularly-
    Black pepper
    salt
    garlic powder
    onion powder
    italian seasoning
    cayenne pepper
You can also grab some of those grinders that McCormick's makes and use those, they are already blended with several herbs & spices and are pretty good. Also store bought marinades from KC masterpiece, Lowrys & even the store brands are pretty good as well.

You can pretty much cook it the same way as you would a pork chop. It's fantastic grilled due to the extra grease so it doesn't dry out as quickly as pork chops.

I was shocked by how greasy they were! Grilled would be awesome especially if they don't turn out as dry as pork chops.
