is it wrong to ask a breeder to double check and make sure the sex is right

I wouldn't ask the same person to check it if I was doubting them. They would most likely tell you the wrong sex again.
I am guessing this is for a snake you are looking to buy and do not have at the moment so you can not do it yourself or take it to a trusted place.
I don't think I would say it would be rude but I don't see the reasoning to do it. I think if it were me and I was worried about getting a certain sex I would ask for some kind of sex guarantee. However depending on the snake in question it may not be possible. I am only responding to the little you gave me to work with.

Personally, I would just make it clear to them that the gender matters a great deal to you- whereas others may just want a pet of either gender. As already suggested, you might ask for a "gender guarantee"- you'd probably need it in writing though to be effective- hopefully they won't be offended.
You're the buyer, so you're certainly entitled to get what you want, but do try to be diplomatic.

I wouldn't be offended whatsoever if someone asked me to double check, and I do that as a practice anyhow just in case the snake was really tense when I did it the first time and I got it wrong. I agree it's best to get a sex guarantee in writing if you can if sex matters. Even the pros mess it up sometimes! The important thing is being willing to make it right when you do mess it up.

I purchased 3 this week from the same breeder, and before I took them he double checked them and turns out one of the 3 was male, so he offered me a choice of 2 Enchi females instead, I chose one, he checked it, that turned out to be male too, so it’s imperative that you check, check, and check again.

I usually get in writing that the breeder guarantees the genetics and the sex of the animal I purchase and discuss their policy regarding replacement/refund if it's not what I receive prior to agreeing to purchase. I have not had any issues with any breeder agreeing to those terms. I started doing this after winning an auction for a Pastel Bamboo female that turned out to be a male from a well known breeder.
