There are a variety of building materials that you can use depending on your budget and availability. Melamine is a common choice, as it already has a plastic water resistant coating on it. Some use regular wood products and seal the inside with a water resistant coating. A great option is using PVC board. This is a bit more expensive and might require ordering to your nearest hardware store depending on availability in your area. PVC is super light, self extinguishing and pretty easy to work with. Only downside is the price.
Ive built large enclosures with melamine and had great success. You still need to seal the edges with aquarium grade silicone. It holds heat and humidity great, however, the tanks do get heavy when large enough for a monitor. So it would definitely be an enclosure that would stay in one location, and require multiple people to move.
