For a quick clean I'd use some diluted Chlorehexidine. You can get it at some pet stores, RBI sells it on their site. I use it to spot clean or clean up messes. I love it.
For a full blown sterilization, I use a bleach/water/vinegar combo. No need to do that too often though, maybe 1 -2 a year or when you change cages. I use it for my mice tubs once in a great while as well because it works great at killing odors.
I've heard mixed opinions on using dish soap or anti-bacterial soap. I've heard they leave behind residues that are difficult to remove, and impossible to see.
For water dishes, I just change the water every two days, and once or twice a month I clean the dish out with diluted Chlorhexidine.
That is my way of doing it.

Well, depending on what you have in the tub, you can use dish soap on the hides, water bowl, and any decorations if you have them. Then a 50/50 bleach and water mix for the actual tub. But, as already stated above, it does not need to be done all of the time.
