    What's to eat?
    Well we know Nate is having burnt pizza :giggle:

    I'm also having an off night. I made meatloaf, meant to make potatoes and rolls with it, but despite going to two grocers today, I am out of butter. So I ended up making steamed cauliflower and sliced apples instead. You know, you can't make much else when you have no butter.

    What did you have?

    I had a 4oz burger with a little bit of mozarella cheese worked in and an apple. I had to forgo any bread with it 'cause I had just taken a new loaf out of the freezer. I've kind of had a "snacky" day, with 5 little meals instead of a few big ones...which is why it doesn't sound like a lot :) It was delicious.

    That goes double for me. Throw in a slice of pepperoni pizza and that makes an entire meal full of the things that are terrible for me--but that I -love- to eat. :)

    I had leftover spaghetti noodles w/ some butter and fresh parmesan cheese and a little red onion throw in.
    I was pretty darn good.

    Tonight was hotdogs steamed in guiness stout with garlic added to the liquid. My special "Connie Island" sauce, which is garlic, thin sliced onion, jalepeno and stewed tomato simmered until the flavors meld. Yellow mustard on top.

    Tomorrow, I'm thinking of a chicken and Andouille gumbo over rice. Got to make the Rue!;) I have all trinity vegis just waiting for the marriage. A little File' and I'll be set. Cest La Vie!:) This weekend will be a crawfish boil! Suck head and eat tail!;) as they say down in the Bayou. Some Wayne Toups music and let the good times roll! :D

    When I met Kelly she watched all the cooking shows, I'm telling myself "oh, I finally got a cook!!" No, I do it. But I have learned to cook. I will have to post pics of my kitchen at this time when I get home. We gutted it down to the studs. New kitchen coming in 4 weeks. Now we are eating out of a microwave in the living room.:rolleyes: I have a nice set of All Clad once the works done though!!:D :D

    If you want to cook Cajun or Southern, you need cast iron! Trust me.;)

    Wow, everything sounds soooo good....hehe except for the oats! I'm not an oat person, unless it's in a cookie with raisins.

    Craig, you are invited to come live with me! I think I might try your Coneys later this week, my mouth watered just reading the ingredients.

    I took some chicken breasts and massaged in some island jerk rub. Then I brushed the grill with extra virgin olive oil and sprinkeled dried rosemary. While the chicken was grilling slowly I made a mango chutney with peppers. Once the chicken was done I topped it with the chutney and served with steamed yellow squash and spring salad. Mmmmmmm :lick:

    Ah, I changed my mind about tonights dinner. I decided to grill some chicken breasts. First, I made a basting/finishing sauce. Garlic sauted in butter, add some freshly toasted and ground cumin and corriander seed, honey, lime juice, kosher salt and chipoltle chilis in adobo.

    Next I prepared an onion and green pepper for grilling with the same dry spices in the sauce, litely coated in olive oil. Preped the grill and we're on our way.

    The chicken was rubbed with chipoltle chili poweder, some freshly ground cumin and corriander, kosher salt and brushed with olive oil.

    Flour tortillas toasted in a pan, some sour cream, the vegis, chicken and sauce. Umm a spectacular burrito!

    A degestivo of Portugese Port and I'm set!;)

    I've had a packet of mcvities ginger nuts and might summon the energy to stun some ham into a roll in about half an hour.



    I've heard of healthy eating but want no truck with it. :P
