Where's my good cooks at?
I need opinions on my dinner dish. I threw some chicken sprinkled with salt, pepper and garlic powder in the crock pot and covered it with a mixture of 2 cans cheddar cheese soup, 2 cans cream of chicken with herb soup and about 3/4 cup of milk. I plan on adding some frozen broccoli about an hour before its done, and serve over egg noodles. I prefer wild rice but I'm the only rice eater in the house.
I'm kinda just throwing this all together to make a new recipe and I'm just looking for suggestions on if there's anything else I could add. Or does it sound great as is? I was thinking about adding a good dollop of sour cream towards the end, but would that be over kill? Thanks for helping me out :)

Sounds really good! I LOVE sour cream so that would be the icing on the cake for me, but the way it is sounds super awesome also!

I will say that, to me at least, it appears that you have no concern for your caloric intake for your dinner meal! That aside, it doesn't sound bad at all and I'd try some if I were going to be in the area around dinner time! I personally love quartering a whole chicken, searing it in a pan with olive oil, fresh crushed garlic and lemon pepper seasoning and then baking it until it is cooked through. That with some fresh steamed broccoli or asparagus or even some blanched spinach and some brown rice, wheat berries, quinoa or some other grain, and you have a kick butt meal. Of course, you can't forget a nice, chilled glass of Pinot Grigio to go with it. Oh man, why do I do this to myself when I still have three months left in this forsaken place! LOL :rolleyes:

You put a whole chicken into the crock pot or chicken breasts? Im not sure how well that would come out, in my head im picturing the chicken getting kinda soggy. And if its a whole chicken then youre not gunna get any crispy skin to nibble on! Broccoli or asparagus sounds good. Maybe mix some peas, corn, carrots or potatoes in with it too. I would definetly eat that over rice, too bad you said no one else likes rice. Thats kinda a weird thing not to like btw lol.

Sounds pretty good, except for the broccoli, lol. How about some French fried onions to put on top of everything after your done? I might use a shell noodles instead, those egg noodles seem to get pretty soggy, pretty fast. What time is dinner? :D
Mike, cheddar cheese soup is a staple in my cupboard, lol. Can be used as a base for many things. It's thicker than say tomatoes soup, thinner than sour cream, and well, cheddar flavored. Used in sauces, tater tot pie, hashbrown casserole...

No one in your family must be lactose intolerant! Haha. That's a lot of cream. Like, a lot! Going to be a very rich dish, for sure.
As for adjustments to it, I'd definitely look to serve this with as light and refreshing a side as I could. Instead of tossing in veggies to the mix, I'd steam the veggies on the side and really try to go for something more acidic to counteract the richness of the meal. The majority of your meal is going to be heavy, so it would be tricky to balance. Egg noodles is a good choice.
I'd personally steam up a bunch of beans and bright green veggies with this. I'd probably add lemon to the steam bath to give it that little hint of palette cleansing between bites.
Or, serve something really light and fruity for dessert.

Well I found a bag of frozen broccoli stir fry veggies that I'm gonna steam instead of adding to the crock pot. And actually, I am lactose intolerant, but I just love dairy. It's so dang good!
I just have to add, that my house is smelling really good right now, lol.

you lost me. :p My mom doesnt cook lol. So you wouldnt eat it as just soup though right?
Tater pot pie and hashbrown casserole sound amazing though!

That sounds delicious! Sorry I have no advice to offer, my crock pot skills are limited to dropping some meat in there and pouring on top a beer or two - maybe a cut veggie if I'm feeling daring.. :D

No, at least I wouldn't eat it as a soup. It would be a mouth full of gloppy cheesy sauce/soup. Maybe diluted down in a cheddar broccoli soup. But not plain.

Actually a lot of people do eat it as soup. You would dilute it with milk like tomato soup, and serve it with crusty bread. Another good idea I have heard is to dilute it with beer instead of milk and serve it that way. I hate the taste of beer so I haven't tried it that way. I cook a LOT with cheddar soup. You can stir it into any sort of casserole, rice dish, or mexican food. It is also great to add to homemade potato soup or broccoli soup.
Heather, your dinner sounds divine. I agree go light with the side dish, and you MUST serve fresh bread with such an indulgent dish. Do you have a bread machine by chance? I have a killer dinner roll recipe for the bread machine.

I bet your house smells good! Also, have you ever been tested to see what part of cows milk that you take issue with? It could be protiens and not the lactose, so goats milk might work for your. Just a thought!

No I've never been tested, I just know when I drink milk, eat ice cream, etc., I got a horrible stomach ache and have to run to the bathroom, lol.

I personally am a big fan of adding lightly cooked vieggies to what sounds like an already soft (albeit yummy) base. Carrots and Broccoli could be nice additions if still a little crunchy for texture. I personally would have used brown rice (also a little chewier) rather then soft egg noodles but that is just me. Also adding a green herb like parsley can be nice not only for color but also add a little freshness to any meal.
Just remember to taste.. and taste frequently ;) im always full before dinner because I eat everything as I am going.

another note. If you cook the noodles and put them in the bottom of a pan, add chicken and soup mixture (already cooked) and some garlic/breadcrumbs on top you can throw it into the oven for a few minutes to get the top crispy... now you have a kick butt casserole.

My son can't have any dairy at all due to food allergies, but I do love it myself. Some of the best substitutions I've found for cooking are Tofutti "sour ream" and "cream cheese", Daiya "cheese" shreds and blocks, and Earth Balance margarine. Coconut milk is incredibly rich and creamy, and works especially well in curries and desserts. Hope that helps!

If i paid for the process would any of you good cooks be willing to adopt me? I only need a water dish in my tub. You dont have to give me a hide even. I'd be cool with newspaper as substrate as long as its the sports section so i can keep up with football. If your feeding me deliciousness like tater tot pie i promise to eat for you every time and breed any females you put me to... :D

I love crockpot meals for family style eating..I love homemade chili and soup in a crock pot in the winter time. From time to time I'll felx my cooking chops but with kids and a wife, it's mac 'n' cheese and chicken fingers.

I looooove cooking. Although what you made is probably something I won't try. I don't know...weird that way.
My favorite stuff to make is pizza. Sometimes to help with the calories, I'll buy those thin hamburger buns? I'll put them in the oven for a little while until they're just a bit crispy, put the toppings on and then put them back in the oven until the toppings are warm. They come out as really really great, quick, easy and cheap little pizzas.
I usually like to use toppings like a mixture of onions and peppers, with sausage. Or I do a veggie thing with fresh spinach, tomatoes, mushrooms and olives.
I make a seafood stuffing during the holidays too. My mate loooooves it, and looks forward to just it every year. XD My family is filled with cajuns, so I've learned a lot of their recipes too. Basically, you just cook a good seafood gumbo and use it in place of what you normally use in your stuffing to make it moist.
Man, I could talk about food all day.
