    Heyy guys :)

    My Mum is getting married July 7th :) This is her second wedding and everybody is trying to make sure it's perfect for her and her hubby to be :) I'm making the wedding cake, and being a bridesmaid AND customising the invites...

    She has also asked me to do a cupcake tower, which I have no problem with as I love to make cupcakes:

    Looove to bake :) :) Anywayyyy I really don't want this to go wrong :) Does anyone have, or can you recommend, a recipe that they love to use for vanilla cupcakes?

    I don't have any recipes, but I'm sending a big congrats! From the looks of those cupcakes you are going to rock the cupcake tower! They look delicious! (now I gotta go out and get me some cupcakes:)

    Thank you! I'll pass that on :D The cupcake on the right is a red velvet Rob :) And by far the best Ive ever made and I will be making them on the regular! However Mums theme is pink :( I tried making pink velvet but it didn't quite work, and I'm still experimenting :) If she said I could just make those, Id be more than happy!

    Those cupcakes look awesome! I would have to say I am usually more of a chocolate cupcake person. However for my daughters bday one year I did do half chocolate, half vanilla. I also filled them with the opposite flavor filling. They were a hit. What about doing something with angelfood cake? Wouldn't quite be cupcakes, but you could color a thin icing pink. Maybe decorate with fresh fruit, or edible flowers??

    I use a basic recipe from AllRecipes online. I also made icing from scratch that was awesome in taste.

    A white cake or angel cake or white chocolate batter can all be colored pink, as can icing or ganauche.

    Made from scratch, cake is so obscenely cheap to make! Even really great frosting is cheap! The only problem I had was my hand mixer gave up and did trying to mix the frosting. I really needed a stand mixer, which I don't have and won't buy JUST to mix frosting occasionally. So I hand mix it, which takes a long time.

    I fell in looooove with some salted caramel cupcakes not long ago, however I have no recipe :( Good luck and 'gratz! When you do get a recipe figured out, cupcake pics are always deliciously cute :D

    They look really yummy! Hobby Lobby/Micheals have really cute cupcake paper and decorations you can stick in them. I'm not sure if those stores are in your area, but any craft store should have awesome cupcake stuff. I don't have any good recipes, my cupcakes come out of a box, lol.

    Did you already make the invites?

    I made my own save the dates, RSVPs, and invites all for about $40 (and I made about 150 of each), here is what my invite looks like.

    And if you guys are needing dresses, this site has really great prices. I know it's an international company, but most prom dresses come from China anyhow. One of my bridesmaids got her last bridesmaid dress from this company and was happy with it. www.tbdress.com there are a TON of wedding dresses on that site for next to nothing. I'm sure the dress will come in a box and need steamed though. I ordered my bridesmaid dresses from the site and I'm waiting for them to come in, so I can't vogue for how nice the dresses are or aren't.

    Thanks for all the comments guys! Most appreciated :D i think the opposite cake to flavour icing is a great idea :) chocolate with pink icing and pink with chocolate or vanilla In thinking... Also with the invites, mum has the basic invites, but I do cartoony graphics for her business and she wants them :) I love scrapbooking with her though, so they'll no doubt have that extra added touch :D

    Not sure I would want to make enough of these for a tower but they are the most amazing vanilla cupcakes. They are very involved though with is the only downer but totally worth it. Good Luck!


    The Ultimate Vanilla Cupcake Recipe

    Yield: 16 cupcakes
    1 cup (225 grams) granulated sugar
    1 vanilla bean
    1 3/4 cups (175 grams) cake flour, not self-rising
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/4 cup (57 grams) unsalted butter, room temperature
    2 large eggs, room temperature
    1/3 cup (75 grams) full-fat sour cream
    1/4 cup canola oil or vegetable oil (60 ml)
    1 tablespoon pure (not imitation) vanilla extract
    2/3 cup (160 ml) whole milk

    Preheat oven to 350 F (175 C).

    In a small bowl, combine sugar and seeds from the vanilla bean.

    Using the back of a spoon, move around the bowl and apply pressure to break up any clumps of seeds and to better infuse the vanilla flavor into the sugar. Set aside.

    In a medium-sized mixing bowl or bowl of a stand mixer, mix together cake flour, baking powder, baking soda, and salt.

    Add the vanilla bean sugar and mix until well combined.

    Add butter and mix on medium-low speed for three minutes. Because there is so little butter, you'll end up with a very fine crumb texture.

    In a small mixing bowl, whisk together eggs, sour cream, oil, and vanilla extract until smooth.
    Add the egg mixture to the flour mixture and beat on medium speed until just combined.

    Slowly add milk and mix on low speed until just combined. The batter will be liquid. (Don't worry, you didn't do anything wrong. It's supposed to be that way.)

    Fill cupcake liners just over 1/2 full.

    Bake for 14 minutes and then test to see if they are done. They are done when a toothpick comes out without wet batter stuck to it. The cupcakes should appear white with specks of vanilla bean. They should not turn a golden brown. If they are not done, test again in two minutes. If they are still not done, test again in another two minutes.

    When the cupcakes are done, remove them immediately from the tins and leave them on a cooling rack to cool.


    Vanilla Bean Buttercream Frosting

    Ingredients
    1 1/2 cup confectioners' sugar (add more until it reaches your preferred consistency)
    1/2 cup unsalted butter, room temperature
    2 teaspoons vanilla bean paste (add more to taste)
    1 tablespoon milk

    Directions
    Mix together sugar and butter until they are blended and creamy.
    Add vanilla bean paste and milk and continue to beat for another minute.
    If desired, add more vanilla bean paste to taste, or more confectioners' sugar to make it stiffer.
