I highly recommend hognose snakes. Western hognose snakes have many available morphs these days, and the albinos in particular are becoming affordable enough.
If you want something a little less common, you could opt for a mexican hognose snake. I've got a good feeling that something really cool is going to pop up from mexi hogs in the next decade, plus it's just fun having something that isn't too common in the hobby.
I love my hogs. If I had to keep only two species rather than the 10+ that we average, it'd be carpet pythons and hognose snakes.
