I don't have updated pictures and this pic is from early testing.
It's being refitted with 2 feet of heat tape on each side as we had only two in the rear last season and felt it needed more for better stability.
It has a bathroom ceiling fan on the floor of the inc blowing upwards and it's plugged into a dimmer switch to control the fan speed.

    Thanks!
We have $400 into this one total cost including the $108 Herpstat thermostat.
This year I'm using an even larger inc and my partner took the coke cooler to his house.
Still a true brand cooler but a taller unit(more shelves :D)
I picked one up like this one for $200 and will have $400 it also when it's ready to go.

Here's my incubator. I am still working on it, but it's almost finished.

You might think about going to a proportional thermostat instead of fighting an on/off thermostat the whole time.

I used a repti-temp 500R my first season and what a pain it was.
On off thermostats will allow more of a temperature swing than you want making you constantly tinker with it, no fun at all.

All good just trying to help.
My thermostat was within 2-3 degrees too till the eggs got further into the incubation process.
On/off thermostats are not good for incubating IMO, will they work? Sure
Would I trust my babies to one again....not a chance

Yep, I have a Ranco hardwired in, you can see the edge of it just above the fire extinguisher. We will be adding a second Ranco and heater as backup.

We also have a temperature guard monitoring system with phone dialer hooked up.

that walk in is awesome, I'm trying to talk my business partner into letting me use some space at his house for a walk in but his wife is terrified of snakes so I'm not holding my breath

You guys have amazing setups... Is there any good websites that go more into detail about setting them up and what you need, and maybe how to build your own?

Generally for temperature stabilization. The water gets to where it matches the temp inside, so it makes it easier to re stabilize the temperature after opening/closing the bator.
