So If condensation were to form on the top of the egg box, how long would it take before the condensation accumulated there?

I would depend on the differences in temperature between the inside of the incubator and the outside of the incubator. The greater the difference, the quicker the condensation provided that it is hotter on the inside than it is on the outside.
