I worked at Subway for almost 2 years. I will never eat there unless my manager makes my sandwich. Believe me, if you smelled the food when it's in "The unit", you wouldn't eat there.
As far as the knife thing goes, they're supposed to wash the knife that cuts the sandwich in half after each sandwich. So, if you're worried, you can ask them to wash it and they cannot say no. You can also ask them to change their gloves, get a different piece of bread, meat, cheese, etc. You can ask them alot of things, and most of the sanitary questions they have to say yes to. Yeah, they'll bicker about it when you're gone, but at least you'll feel better about what you're about to eat.

Processed, pressed, or extracted foods are the foods I worry about.
Ketchup for example, could easily have many things ground up into it. Rat infestations are often common in factories as well.

I love the taste of ants, they taste like sweet tarts.
I would be ticked off too I don't care if there are bugs in my food just make sure I cant see em!
I only swear off places that time and time again screw up, other wise I could not eat any where.

Every subway is different. Some are very clean, some are ok, some are dirty. The one by my house, I know the couple who own it, they are very strict and very clean. You also have to understand, a place that keeps food year around will have insects and such in it. It happens and it's impossible for it to not happen. People put their fingers in their mouth, they scratch themselves, people cough on their hands. A lot of the burger kings, mc donalds, wendys, and places like that touch your bread without having gloves on.
