Ohhhh fantastic thread! There are several that I could mention, but the one I think I've made the most is my favourite comfort food: rice pudding!
Creamy Rice Pudding
Prep Time: 25 Minutes * Cook Time: 20 Minutes * Ready In: 45 Minutes (approximately)
Ingredients:
* 1 1/2 cups water
* 3/4 cup uncooked white rice (I like short grain, medium is also acceptable. Long grain not recommended.)
* 1 1/2 & 1/2 cups milk
* 1/3 cup white sugar
* 1/8 & 1/4 teaspoon salt
* 1 egg, beaten
* 2/3 cup golden raisins (optional)
* 1 tablespoon butter
* 1/4 & 1/2 teaspoon vanilla extract
Steps:
1) Wash rice in cold water until water turns mostly clear, usually 3-5 times. (This removed excess starch which will keep the pudding creamy, not hard.)
2) In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and 1/8 salt, stir. Reduce heat, cover and simmer (minimum heat) for 20 minutes.
3) Add 1 1/2 cups milk, sugar, 1/4 salt and 1/4 vanilla extract. Cook over medium heat until thick and creamy, about 15-20 minutes. Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and 1/2 teaspoon vanilla. Serve warm.
NOTE:
* This recipe may be made using Splenda instead of sugar. Use 1/3 the amount. This is an easy way to enjoy this creamy rice pudding but cut down on the sugar and calories.
* If desired, prior to serving, add a dash of ground cinnamon or a small pinch of nutmeg to each bowl for flavour.

Okay I never wrote this out before. I am used to eyeballing it. It's my secret star to my summer BBQ's.
Seru's Death Sauce
Two diced Jalapeno
One Diced Poblano
Five minced cloves of Garlic
One cup of minced onion (red or white)
1 tablespoon of grated ginger root
Half a Bottle of Good quality soy Sauce
3 Table Spoons of Sriacha
1 table spoon of texas pete
1 tsp each
Mustard
Red pepper
Fresh Cracked black pepper corns
Minced Cliantro
Cinnamon
Add vegetables to hot sauce pot and sweat until soft and faded.
Add soy sauce, Sriacha, and texas pete. bring to a soft boil and reduce heat immediatly.
Stir in ginger And spices.
Simmer for an hour to 2 hrs.
Serve.
Excellent for Red meat, best as a basting sauce as it is thin.

TORTILLA SOUP
4-Tbs. Oil
I-medium onion chopped
4-large cloves garlic roughly chopped
2-jalapenos, seeded sliced
1 Tbs. dried oregano
I-tsp. Cumin
1-28 oz. Can chopped tomatoes
3-cups shredded chicken
few dashes Worcestershire sauce
3-4 cups chicken stock
I-lime
I-cup cooked rice
sour cream, avocado and cilantro for garnish
Heat oil over medium heat add chopped onion,
saute for 1-2 min. Add garlic and jalapeno
sweat until soft and translucent. Add spice and
cook 1-2 min until fragrant. Add tomatoes,
chicken, Worcestershire sauce and stock, Bring
to simmer and cook 20 min. Cut lime in 1/2
squeeze lime juice and add lime halves. (remove
limes if you have leftovers)
put 1/2 cup of rice in the bottom of a bowl,
ladle soup on top and garnish.
I added a bit of cayenne pepper for an extra kick.
I have a few dessert recipes that are great too but they are family secrets lol ;)

I love love LOVE Rice pudding! Tortilla soup is also awesome. Seru1, yours may be a bit too HOTTTT for me.. :tears: :rofl:

Heres a little thing I like to do with that leftover salmon.
Salmon Cakes
1 filet Salmon cooked

a couple cloves of garlic
some of your favorite spices(I use salt, pepper, curry, and paprika or smoked paprika. Maybe a little old bay.)
1 egg
about 6 or 8 Ritz Crackers or 1/2cup breadcrums.
As I'm sure you all noticed I'm a stickler for the measuring thing too. Mince the onion and the pickle chips. Mix them in a bowl with the salmon, spices and Hellmans. I do like to add a couple Tbs whipped philly cream cheese, gives a nice Texture. Toss in the egg and mix. Add Ritz to bring it together, however, remember if its too dry the finished product falls apart. Form the mixture into patties and pan fry in a thin layer of light oil or butter.

- 1 lb lean ground beef
- 1 large egg
- Italian bread crumbs
I recommend wearing gloves for this. In a large bowl combine meat, egg, and ~1/2 cup of bread crumbs. Mix them together by hand. Add more bread crumbs and mix until the beef is sort of like a paste in consistency. You want it to still be plenty of moist, but it shouldn't feel very wet; meat should clump together and stay together when pressed. I never have measured out how much bread crumbs I add, always go by feel.
Divide into 4 patties and then grill them how much you like them to be cooked. I personally like to do medium - just a slight tint of pink on the inside. Serve with however you like your burgers.
With this recipe the egg adds a lot of moisture so the burgers don't dry out when they cook, and the italian bread crumbs help hold it together and give a little flavor as well. Enjoy!!
These sound great simple is sometimes better. I don't eat alot of red meat so if there are any others who look to the lighter side of ground meats...
Not so Turkey, Turkey Burgers(I can't stand a burger that tastes like Thanksgiving leftovers.)
1lb Ground Turkey
1 sm Bell Pepper(Green or Colored)
1 sm or 1/2 med Onion
3-5 cloves garlic
W sauce
italian seasoning
smoked peprika
salt and pepper
Mince the bell pepper, onion, garlic(very small) Mix veggies with ground turkey, shake in some W sauce and spices. sometimes I'll use some breadcrums if the mixture is too wet.
This takes a little to prepare so I usually do it in bulk and freeze the burgers in Ziplocks sepparated by wax paper.
I've got a couple others but its late, and this is getting to be a long post g'night all. :)
