I'm using a acurite thermometer and that probe is inside the cage about in the center of where the heat pad is.

If I'm correct, you are using a rheostat, not a thermostat. Does it look like this one:

Edit: Ok, wrong item, but you are still using a rheostat. Those must be manually controlled, hence the temp spike when your house temp rose.

It already is a rheostat. Using another would cause the same problems. Check out the Repti temp 500r.

That is the most ideal situation. You can use your existing UTH, however, if the tstat fails (as any can, regardless of price) in the on position, the backup setting on the UTH could burn the snake since you said it's super hot. But I don't think there would be any functional problems with using your current UTH, just make sure to set the switch on the UTH to a reasonable setting before plugging it into the tstat.

A proper thermostat is the best piece of mind you will ever get. You can just set it to an exact temp and forget it. With the reostat like you have (I had one for a long long time) will always need to be checked and reset because of fluctuations, but the thermostat will be constant. Buy a temp gun too.

Right now I will have to use the heat lamp until I get money to purchase everything all over again.

I had to do the same thing with my first snake. After that, I have always made sure I had the enclosure perfect before getting the animal, but we all live and learn like that I guess.
One thing for sure, when I decided to start breeding that early mistake of mine made an impact on me, and I invested in getting my rack system built and set up properly before I ever bought the animals to put in it.
